A simple, flavorful soup to warm you up on the chilliest of nights.
Creamy Zucchini Soup
Serves 3
Ingredients:
- 1 tbsp of olive oil
- 1 medium onion, peeled and chopped
- 2 cloves garlic, peeled and chopped
- 3 medium size zucchinis, chopped into chunks
- 4 large handfuls of spinach
- 3 cups of bone broth (or vegetable broth, if preferred)
- 1 cup of coconut milk
Directions:
- In a large pan, add olive oil, onions and garlic. Cook over medium heat until onions and garlic are soft and fragrant.
- Add the zucchini and the bone broth, and bring to a simmer. Partially cover and cook until the zucchini is cooked, approximately 10 minutes.
- Stir in the coconut milk and add spinach. Mix until spinach is wilted, and then remove from heat.
- Use a hand blender or food processor to blitz to a fine purée.
- Serve warm.
