Deconstructed Egg Rolls

Serves 2
Ingredients:
- 1/2 head green cabbage, shredded
- 1 carrot, shredded
- 1 onion, diced
- 3 cloves garlic, minced
- 1 inch fresh ginger, grated
- 2 green onions, sliced
- 1 tbsp coconut oil
- 1/2 pound ground beef
- 1/2 cup coconut aminos
- Sea salt, to taste
Directions:
- Heat coconut oil in a skillet. Add onion and cook until it begins to soften. Add beef and break apart with a wooden spoon, cooking until it is no longer pink.
- Meanwhile, in a small bowl combine garlic, coconut aminos, and ginger; set aside.
- Once beef is cooked through, add cabbage and carrots to skillet and stir to combine.
- Pour sauce mixture into the skillet and stir, continuing to cook over medium heat for about 5-15 minutes or until cabbage is wilted.
- Season with salt, to taste. Top with sliced green onion and serve.
