Simple Veggie Stir-Fry
Adapted from The Roasted Root
Serves 1-2
Ingredients:
- 1 tbsp olive oil or coconut oil
- 1 large carrots, diced
- 1 small crown broccoli, chopped into florets
- 1 cup red cabbage, sliced
- 1/2 medium-sized onion, chopped
- 1-inch piece of fresh ginger, peeled and grated
- 2 tbsp coconut aminos
- 1/4 tsp sea salt to taste
Directions:
- Heat the oil over medium heat in a pan.
- Add onions, carrots, broccoli and cabbage. Stir well and cover. Cook for about 5 minutes, until veggies become soft, stirring occasionally.
- Remove cover and add remaining ingredients. Replace cover and cook an additional 2-3 minutes, stirring occasionally, until vegetables reach desired doneness.
- Serve vegetables with your favorite entrée.
